If you love traditional Indian sweets, then Chandrakala is a must-try! This rich, flaky, and sweet dessert is especially popular during festivals like Diwali and Holi. It’s similar to gujiya but has a unique layered texture and is soaked in sugar syrup, making it irresistibly indulgent.

In this blog, I’ll guide you through an easy, step-by-step recipe to make Chandrakala at home.

🌟 Ingredients  See Video

For the Dough:

  • 2 cups all-purpose flour (maida)
  • 4 tbsp ghee
  • Water (as needed)

For the Filling:

  • 1 cup khoya (mawa)
  • 2 tbsp powdered sugar
  • 2 tbsp chopped nuts (almonds, cashews, pistachios)
  • 1/2 tsp cardamom powder

For Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • 3–4 cardamom pods
  • Few saffron strands (optional)

For Frying:

  • Ghee or oil

🥣 Step-by-Step Instructions

1. Prepare the Dough

  • In a bowl, mix flour and ghee.
  • Rub the mixture until it becomes crumbly.
  • Add water gradually and knead into a firm dough.
  • Cover and let it rest for 20–30 minutes.

2. Make the Filling

  • In a pan, lightly roast the khoya until it softens.
  • Let it cool, then mix in powdered sugar, chopped nuts, and cardamom powder.
  • Your filling is ready!

3. Shape the Chandrakala

  • Divide the dough into small balls.
  • Roll each into small puris (discs).
  • Place some filling in the center of one disc.
  • Cover with another disc and seal the edges tightly (use a fork or twist edges for design).

4. Fry to Perfection

  • Heat ghee/oil on low-medium flame.
  • Fry the prepared Chandrakalas until golden and crisp.
  • Remove and set aside.

5. Prepare Sugar Syrup

  • Boil sugar and water together.
  • Add cardamom and saffron.
  • Cook until it reaches a one-string consistency.

6. Final Touch

  • Dip the fried Chandrakalas in warm sugar syrup for a few minutes.
  • Remove and let them rest so the syrup sets.

✨ Tips for Best Results

  • Always fry on low flame for even cooking.
  • Seal edges properly to prevent filling from leaking.
  • Don’t soak too long in syrup—just enough to coat.

🎉 Serving Suggestions

Serve Chandrakala garnished with chopped pistachios or silver leaf (varak). It tastes best when slightly warm or at room temperature.
